Chocolate Covered Strawberries

We’ve been whipping up some of the best chocolate covered strawberries around for about 8 years now. By now, we have worked out all the kinks you could possibly imagine and operate like a well-oiled machine. We started off with just 1 chocolate warmer and would operate out of our bakery off 1 single table. Now we use a whole room with about 15 tables and 4 chocolate warmers to keep up with the demand we’ve created.

We start planning for berry dipping usually in November. We look at numbers from last season to determine how many berries we need to order. This season we are estimating we will dip about 15,000 berries which is A LOT. Once we finalize our numbers, we order all the supplies – chocolate, strawberries, sprinkles, and the packaging.

Once the berries arrive, the first step is washing them. After they’ve been given a good wash, we lay them on baking sheets in a bakery rack to “dry” them. Within an hour, they are “dry” enough to dip. The rack then heads over to the dipping area where the fun begins. We dip the berries according to our orders and decorate as so. Once the chocolate has set up, we place them into cupcake liners and into the boxes they go. Once the order is complete, we store them in the fridge until the customer picks up.

When you order your berries, you have the option to attach a gift message which we handwrite to go along with your berries. These make the perfect Valentine’s Day gift but are also great for birthdays or a “just because” gift to make someone’s day. Once the berries get to their destination, it is best to keep them refrigerated. To maximize their shelf life, place a few paper towels in the bottom of an airtight container to help absorb some of the moisture that will occur. They should last up to 4 days in the fridge, although they never last that long in my house. LOL
